Random Midnight Snack

I know this is weird, but I LOVE eggplant. So I whipped this up –
I lightly sautéed some sliced eggplant with olive oil, salt and pepper (not very much olive oil). After sautéing for about 3 minutes, I put the eggplant in the oven for ten minutes and then BAM! You’re done. It really is good!
