Spaghetti sauce, salsa, pico de gallo, ketchup – what do these all have in common? TOMATOES.

Surprisingly, tomatoes have a lot of health benefits. By nature, it contains a large amount of antioxidants which aids in the prevention of cancer and other serious diseases such as cardiovascular. Lycopene is one organic compound/antioxidant that tomatoes are well known for.

Lycopene is an antioxidant which appears to prevent the formation of harmful by-products of metabolism called free radicals. Free radicals are thought to be responsible for damaging the body’s cells, as well as their genetic makeup, leading to certain chronic diseases. Lycopene.com

In addition to antioxidants, tomatoes contain many vitamins and minerals that are extremely beneficial: vitamins A, C, and K, as well as significant amounts of vitamin B6, folate, potassium and thiamin – just to name a few.

Folate and Potassium are two of the essential vitamins that the body needs to function properly. Folate aids in heart health, colon health, and healthy cholesterol levels.

Potassium, the third most abundant mineral in human body, is a powerful element in improving health. Potassium helps maintain healthy muscles and brain function. If you work out frequently, especially weightlifting, snacking on something that is high in potassium will help the muscles recover and may slightly decrease the soreness. Organic Facts

It’s always best to eat vegetables RAW and uncooked, because heat damages the molecular structure of the food and in turn leaves little nutrients for the body to absorb. Here’s a recipe of a little something I throw together for dinner most nights. It’s high in potassium AND it includes tomatoes 🙂

Handful of sliced cherry tomatoes

1/2 cucumber cubed or sliced in small pieces

1 ripe avocado

Olive Oil

Salt/Pepper

Mix it all up – it’s sooooo delicious and REFRESHING.
