In addition to antioxidants, tomatoes contain many vitamins and minerals that are extremely beneficial: vitamins A, C, and K, as well as significant amounts of vitamin B6, folate, potassium and thiamin – just to name a few.
Folate and Potassium are two of the essential vitamins that the body needs to function properly. Folate aids in heart health, colon health, and healthy cholesterol levels.
Potassium, the third most abundant mineral in human body, is a powerful element in improving health. Potassium helps maintain healthy muscles and brain function. It’s always best to eat vegetables RAW and uncooked, because heat damages the molecular structure of the food and in turn leaves little nutrients for the body to absorb. Here’s a recipe of a little something I throw together for dinner most nights. It’s high in potassium AND it includes tomatoes 🙂
Handful of sliced cherry tomatoes
1/2 cucumber cubed or sliced in small pieces
1 ripe avocado
Mix it all up – it’s sooooo delicious and REFRESHING.
